Even though I usually buy my fruit and vegetables at the Carouge market, I sometimes, cross the border and do my shopping at the market in Ferney-Voltaire where last Saturday, I made a Big discovery: Le Fumoir du Léman. A breath of fresh air!
The problem when you usually order some lox, you don’t always know where it’s coming from. Most of the time it’s not even sliced correctly. Supermarkets carry pre-packaged smoked fish containing preservatives and high levels of salt. If you really want to know what you’re getting in terms of smoked fish, you need to head to a specialty market and Le Fumoir du Léman is a smoke fish institution. Starting with the fera from the Geneva Lake, sold boneless with its delicate flesh and slightly smoked using wood from an apple tree and alder. The trout comes from the Ain and the Jura. The salmon on the other hand comes from the harbour of Cherbourg in France or from the Scottish Highlands, GMO free. Some rillettes of smoked fish come in handy for a spontaneous appetiser: may I suggest the sea bream and shrimp, lemon, ginger?
Everything is a pure delight. Don’t hesitate to ask questions to the salesman who loves talking about his passion and the relationship he has with his fishermen.
The delights of Le Fumoir du Léman are available every Saturday at the market of Ferney-Voltaire but you can also drive to the village of Douvaine where the shop is located. It’s not next door to Geneva but a culinary journey well worth your time. Give him a call if you want to order in advance.
