Pomegranate, a superfruit

Incorporate pomegranate into your dishes to add a touch of color and flavor. Here are 3 super easy recipes to fully enjoy this superfruit. And of course, with some music!

Pomegranate & Feta Salad

1 cup pomegranate arils
1 cucumber, diced
1 avocado, diced
1/2 cup crumbled feta cheese
1/4 cup fresh mint, chopped
2 tbsp lemon juice
2 tbsp olive oil (preferably Greek)

In a large bowl, combine the pomegranate arils, cucumber, avocado, and feta. Whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss gently. Sprinkle with fresh mint before serving.

Pomegranate Smoothie

In a blender, combine:
1 cup pomegranate juice, 1 banana, 1/2 cup Greek yogurt, 1/2 cup raspberries and 1 tbsp honey.

Pomegranate & Yogurt Dessert

In a bowl, mix 1 Greek yogurt, 1 tbsp honey and a Zest of 1 lemon.
Top with pomegranate arils.
Garnish with a few mint leaves and serve chilled.
